I am trying out this shrimp mousse recipe as a filling for dumplings but I don’t have truffle oil.
Shrimp Mousse

1 1?2 pounds medium shrimp, peeled and deveined

3 eggs
*
1?2 pound butter, chilled, chopped up into 1?8-inch dice
*
1 tablespoon truffle oil
*
Kosher salt and freshly ground white pepper, to taste
Can I replace this with sesame oil? Or should I use olive oil? Or just omit it altogether?
I would probably leave it out. You might try a little garlic in the shrimp when you cook it. The one bottle I have makes it taste a little like it to me at least.

truffle oil usually adds a mushroomy flavour. Find a small packet of porcini mushroom powder or any dried mushroom at the store. Then just pulse them in a food processor with a bit salt and oil. Keep the rest for another occasion.

Sesame oil would be fine—as long as you like the taste—-it has a strong flavor so you don’t need much.
You can add a diced mushroom to get some earthy flavor like the truffle—if you want.
